Malibu Rum Prawns

Ingredients

  • - 12 Black Tiger Prawns (peeled and de-veined
  • - ½ oz Canola oil
  • - 1 oz sliced red onions
  • - 1 oz cubed red peppers
  • - 1 oz cubed green peppers
  • - 3 oz diced gold pineapple
  • - 4-5 sprigs fresh chopped Cilantro
  • - pinch of salt
  • - pinch of cracked black pepper
  • - 2 oz Malibu Rum
  • - lemon wedge
  • - shredded coconut
  • - 9-12 Baguette toast rounds
  • - Mango butter
  • - Asiago cheese

Preparation Instructions

Mango butter is easily made by adding a puree of fresh or frozen mango to softened butter with a touch of honey. Spread mango butter on round baguette slices and broil in the oven until golden brown.

In a preheated sauté pan, heat canola oil and add prawns, salt and pepper. Sauté prawns until half cooked then add all onions, peppers, and pineapple. Flambe with Malibu Rum being careful of the flames generated, adding chopped cilantro then squeezing lemon juice into mixture, cooking prawns until tender.

Serve in your favorite dish topped with shredded coconut. Mango baguettes on the side.
