Executive Chef and Olympic Culinary Gold Medalist Dean Hossack will impress you with his selection of culinary creations and an assortment of Okanagan Valley wines purposely selected to enhance your dining experience. Full banquet facilities can accommodate 350 for large groups or events.

Preparation Instructions
Scale salmon sides and remove the skin, including the fat. Mix the dry and wet ingredients together and pour into a pan. Lay salmon sides in the pan, marinating the top side only. Cover with plastic wrap and place in the fridge overnight. Remove from the marinating liquid and cut into portions. Heat a skillet with oil and pan sear the uncured side of the salmon. Cook over medium heat until half cooked. Serve with a warm glass noodle Asian salad.
